Hi Neighbour!

Please allow me to introduce myself.

My name is Karen Nielsen, and I've been working as a chef in Winnipeg since 1994. I have been lucky enough to be chef and sous chef in some of Winnipeg's finest restaurants over the years. 529 Wellington, La Vielle Gare and Pineridge Hollow have given me great experiences and a diverse background of cooking styles. I have been an active volunteer, raising money for local charities, and have taken part in many other public events around the city. You may have seen me on Breakfast Television or live doing public cooking demonstrations.

In early summer of 2010, I purchased the restaurant and three acre property formerly known as "Twin Pines”. We are located at the corner of Glen Bay Rd and Hwy #222 just 12 kms North of Gimli. After extensive renovations to the property, we opened on September 28th 2010 with great reviews and warm well wishes from everyone, we’ve been growing ever since.

The Fat Cat Bistro has four different menus in total, breakfast, lunch, dinner and a small beach menu for summer cottagers, and lounge patrons. All menus consist of fresh local produce and meats. I believe in supporting local farmers and food producers.

We are continuously building and planting gardens full of flowers and plants, including a small “Chef’s Garden" for edible herbs and flowers. There are some tables and benches placed on the grounds for guests to enjoy the lovely atmosphere. I hope you will come and see us soon and enjoy the fruits, flowers and vegetables of our labor.
